Solitary Feast

Some nights it is wonderful to have some time alone, time for contemplation, time in the kitchen and best of all to be able to eat whatever you fancy without having to please anyone else. What I decided on certainly wasn’t (or at least shouldn’t be) everyday food, high in fat and carbohydrates. Not too good for the body but oh so good for the soul, and anyway sometimes a little of what you fancy does you good. The double potato and fennel gratin was lovely, although I’d certainly make a couple of alterations when I make it again. I didn’t peel the white potatoes, a definite mistake as it prevented them getting really soft and ‘mushy’, although the skin did give them some structure. I wish I’d added a crushed clove of garlic too, just to add another level of flavour. All in all, a good TV dinner. 

The Recipe:

  • 1 sweet potato
  • 1 white potato
  • 1 fennel bulb
  • 200ml double cream
  • 3 tablespoons Parmesan cheese
  • salt & pepper
  1. Preheat the oven to 200′c or the equivalent.
  2. Slice the vegetables into centimeter thick slices.
  3. Grease a oven dish and spread the white potato over the base, scatter with one tablespoon of the Parmesan, scatter over the fennel and another tablespoon of Parmesan, lay the sweet potato on the top and scatter with the remaining Parmesan.  Seasoning well between each layer.
  4. Pour over the double cream and grate a little nutmeg over the top.
  5. Place in the oven and bake for 45-50 minutes, or until golden and tender.
  6. Enjoy.
