What Do You Get If You Cross Breakfast & Lunch?

What do you get if you cross breakfast with lunch? Brunch of course. Brunch has to be one of my favourite meals when I’m home alone, I don’t all that often eat breakfast (other than coffee and maybe a bit of fruit or porridge if I’m being really good) and then I’m hungry before lunch, so brunch suits me well.

One of my favourite things to eat at brunch is scrambled eggs, preferably on home-made toasted bread. My favourite way to make them is Bill Grangers way – very slowly, lots of cream and they’re still quite loose and wobbly when served. The recipe can be found here.

Who am I trying to kid? These eggs are great for breakfast, brunch, lunch or dinner, so go on give them a try. There are a few rules to follow though:

  1. Use free range (preferably organic eggs), it really is worth it for taste, not to mention the ethical issues.
  2. Use a good frying pan, I like my Le Creuset omelette pan best.
  3. Season the eggs generously.
  4. Use top notch bread, home-made is best and even better if it’s a day old as it will toast better.
  5. Be gentle when cooking the eggs, being heavy handed leads to heavy eggs.
